Now back in Nicaragua, permanently for now, our only task - as we see it - is to see through our dreams of having our own carbon neutral fruit farm in the tropics. We kid you not when we say the mangoes that are growing on our volcanic-soil-based farm will be the best you will ever taste! Large, yellow and with a sugar content that knocks the socks off any other variety in existence, there's little doubting their potential for making frozen wares back in Blighty. The only drawback, if you can call it that, is the wait. The plants are small (9ft) and without jinxing their success of reaching adulthood, we hope to take cuttings from them in a few years.Until then it promises to be a time to perfect tube riding at the world class wave that is our local beach break! That and whiling away the hours perfecting our recipes for the perfect frozen confectionery on our little three phase Carpigiani batch freezer. Wish you were all here. Be Well.
